Soak for 8 to 10 hours or bring chick peas to boil for 5 minutes, take off heat, and soak for one hour.
Drain water and rinse.
Put into plenty of fresh water, bring to boil and simmer for about 60-90 minutes or until tender.
Other varieties of chick peas can be black, green and red.
